Four amazing booze-soaked cakes to treat yourself with for the Bank Holiday

Trine Jensen-Burke

Those of you with an interest in Pinterest might have come across these already, but just in case you haven’t: poke cakes are here, and they are about to change your life.

What is a poke cake, we hear you ask?

Well, true to its name, a poke cake is simply a cake that you poke holes in after baking. An action that might seem a little weird until you realise that you get the fill the little holes with all sorts of amazing things. Like alcohol, for instance.

Meaning, essentially, that you are infusing that sponge with flavours of Baileys, Kahlua, Bourbon or even gin.

Here’s our pick of the best:

1. Bailey’s and coffee poke cake

There is something so doubly-delicious about coffee and Bailey’s when you combine them. And now try to pour all that goodness straight into an actual cake.

You’re welcome.

2. Kahlua chocolate poke cake

Moist. Rich. And filled up with Kahlua. What more do you need?
